I make a quinoa salad dish regularly (roast corn, feta, red pepper, onion etc.). It is universally accepted by guests as delicious.

One thing that I am in the middle of testing:

SOAK AND RINSE BEFORE COOKING!
Not all packages say so, and processing removes a lot of saponin, but I suspect that quinoa has often been upsetting my stomach (the salad is so good I usually eat a ton of it) due to the fact that some residual saponin is not being washed off.

I will post here next time to confirm the results of the experiment.

My log says you do need to wash it. Otherwise it will taste bitter.

I enjoy it cooked with less water than the instructions say, and I replace maybe a cup of water for tomato sauce and then toss in some parsley and Italian herb seasoning and olives, sundried tomatoes for good measure.

The capybara are not what they seem. They are also from South America.

For the record, I just made the dish and soaked and washed the quinoa (even though the package explicitly says no need to wash):

Much smoother taste and did not irritate my stomach, that's all the evidence I need to keep washing it. It does lose a bit of the bitter "whole grain" taste..which is actually kinda nice, but not worth the upset stomach.
