The only people saying this are kids who are repeating the phrase without any context for how media has actually changed and haven't really thought about it, and people whining that they don't get to use the N-word, but Mel Brooks did.

They also firmly ignore how often that word is used in media today such as serious dramas. Because they don't want to just use it, they want to use it in jokes at the expense of black people. Like the characters in Blazing Saddles. All you have to do is ignore how they were the satirized bad guys, and suddenly the complaint makes sense.

The even dumber variant I see on this from kids is "You couldn't make Tropic Thunder today." Because people say blackface is bad, so clearly times have changes since the Obama era days where you could say anything, to the silenced and censored current PC era...

You couldn't make Blazing Saddles today 'cause that might remind Warner Bros. of the four deliberately unaired seasons of the TV version it co-produced with CBS just to get around a sequel clause in Mel Brooks' contract. They might finally want to fart that version out on CW Seed or something.
