at restaurants when asked how I want my steak done I tell the waiter to let the chef make it as rare as he's comfortable making it and then stop cooking about five minutes before that. that is how real men eat steak
This is indeed the proper way to prepare a steak. If it's not trying to crawl off the plate, it's been overcooked.

I like it nice and seared on the outside so the fat is crispy, but if it doesn't bleed when you cut it it's overcooked.
