I'm dubious as to the reality of this. I haven't seen any evidence that the iPhone's motion sensor is capable of detecting rotation, just orientation. One of the common theories about it is that the camera motions are just baked in and he's moving the iPhone in sync with them.

MachDice does something similar (though obviously not rotation-based). The effect works better if you keep one eye closed.

I was just about to say how, apart from dead reckoning, there'd be no way for a device flat on a table to know which direction it was pointing. I'm glad I didn't say that, since compasses exist.
